Easy Broccoli-Cheddar Soup
Heat butter in a stockpot over medium heat. Add onion and cook until softened, about 4 minutes. Add garlic and cook for another minute. Sprinkle xanthan gum over mixture and stir until thickened, about 2 minutes.Stir in broccoli and broth, and reduce heat to low. Simmer until broccoli is bright green and tender, about 10 minutes.Add cheese in 1⁄2-cup batches and stir until cheese is melted between each batch. Once cheese is melted and smooth, stir in cream and pepper until incorporated.Remove from heat and serve immediately.
