The best part is you can make it in 15 minutes with easy-to-find ingredients! This sandwich makes a great breakfast, lunch, or dinner.
A spaghetti omelette sandwich with a piping cup of hot chocolate is what breakfast dreams are made of! On the streets of Cameroon, my country of origin, you will find small cafes with this sandwich on the menu.
It’s such a beloved street food that a Cameroonian artist called Ko-C wrote a song about it called Deux Œufs Spaghetti (French for “two eggs spaghetti”)! I’m so glad to be sharing one of the street foods I grew up eating with you!

- Spaghetti: This is what gives the omelette it’s unique texture and makes it so filling! Just plain boiled spaghetti is what you need.
- Bouillon powder or Maggi seasoning cube: Don’t skip this for that authentic Cameroonian taste. I always have Knorr Chicken Bouillon powder in my kitchen and it works perfectly here!
- French baguette: The crusty baguette is the perfect vessel for this simple sandwich. It’s sturdy enough to hold up well to the filling.

Recipe Variations
- Different protein: Replace the sardine in this spaghetti omelette sandwich with smoked salmon, canned tuna, or leftover shredded chicken.
- Spicy: Add some minced habanero pepper to the omelette mixture to make it spicy. I always add about half of a habanero pepper per omelette when making it for my dad since he prefers spicy food.
- More Veggies: Add some grated carrots, diced mushrooms, or any leftover vegetables you have in the fridge into the omelette mixture.
- Different bread: Sub the baguette for other kinds of bread such as ciabatta or bigger hoagie rolls.

How To Make It
Mix ingredients for the omelette: In a medium mixing bowl, add diced tomato, onion, green bell pepper, sardine, white pepper, bouillon powder, eggs, and spaghetti. Use a fork to slightly break the sardine into chunks, then beat the mixture to combine.
Make the omelette: Heat a medium skillet over medium heat and add olive oil. Once hot, pour in the spaghetti and egg mixture, spreading it out evenly to cover the pan. Reduce heat to low, cover, and let cook for about 5 minutes until the bottom is set.
Flip and Finish Cooking: Carefully flip the omelette and cook for another 2–3 minutes until golden brown and cooked through.
For an extra crunch, toast the baguette lightly before stuffing it with the omelette.
Assemble the Sandwich: Open up the baguette and spread mayonnaise on one side. If using, spread African pepper sauce on the other side. Cut the omelette into halves or thirds and stuff it into the baguette.
Serve: Enjoy the sandwich immediately, with a hot cup of hot chocolate. coffee or tea!

Tips For Success
- Low Heat for the Omelette: Cooking the omelette on low heat allows it to set perfectly without burning, keeping it fluffy and moist in the middle.
- Use a Non-Stick Skillet: Since the omelette has spaghetti and various fillings, use a non-stick skillet to ensure everything stays intact without sticking and flipping is easier.
- Flip Carefully: Use a wide spatula to flip the omelette to prevent breaking. You can also cut it in half before flipping if it’s easier. I love using a small fish spatula to easily flip the omelette.
- Dice Ingredients Small: Dice the tomatoes, onions, and bell peppers finely. Smaller pieces incorporate better in the omelette, giving it a better texture and making it easier to eat.
- Serve Fresh: The sandwich is best served immediately after assembly
- Keep It Warm: If you’re preparing multiple sandwiches, keep the finished omelettes warm by covering them with foil.

To a medium mixing bowl, add the diced tomato, onion, green bell pepper, one sardine, white pepper powder, bouillon powder, eggs, and spaghetti.
2 Tablespoons diced tomato, 2 Tablespoons diced onion, 1 Tablespoon diced green bell pepper, 1 sardine, ⅛ teaspoon white pepper powder, ½ teaspoon chicken or beef bouillon powder, 2 large eggs, ¾ cup cooked spaghetti

Use a fork to slightly break the sardine, leaving a few chunks.

Beat the spaghetti egg mixture well with the fork to combine.

Place a medium skillet on medium heat and drizzle in the olive oil to coat the bottom of the pan.

Let the oil heat up, then add the spaghetti egg mixture, spreading it out to coat the bottom of the pan. Reduce the heat to low and let it cook covered for about 5 minutes until the egg sets at the bottom.

Flip to the other side and let it cook for another 2 to 3 minutes until the egg is cooked through. The omelette should be a beautiful golden color.

Open up the baguette and spread mayonnaise on one side. If using some African pepper sauce, spread the pepper sauce on the other side.,

Cut the omelette in half or thirds and stuff into the baguette.

Serve immediately. If serving for breakfast, serve with a piping hot cup of hot chocolate.
- Do not cook on high heat, as the omelette will burn at the bottom without cooking through.
- The omelette should have a golden brown color but not burnt and the egg should be set on the inside to represent how it is done in Cameroon. Please cook on low heat to achieve these results.
- Make ahead: This sandwich is best enjoyed fresh, but you can prepare the omelette ahead and store it in the fridge. When ready to eat, reheat in a skillet before assembling.
