Simple and Cheesy Sausage Quiche Recipe
I’m really excited to share this awesome sausage quiche recipe! Breakfast is truly my favorite meal of the day, and I’m always trying fun new ideas to spice it up. Quiche is such a delightful way to kick off any day, and it’s perfect for Sunday brunch, too!
I love loading my quiches with all sorts of veggies like broccoli, spinach, asparagus, and mushrooms. With this recipe we decided to keep things simple. We’re just going with some tasty sausage, cheese, onion, eggs, spices, and or course a pie crust. Honestly, this quiche is super yummy, even without the crust! It’s a breeze to make and absolutely delicious! Can’t wait for you to try it!
This isn’t your typical quiche Lorraine; it’s a fun and easy twist on the classic that everyone will adore! No need to fuss over making a custard—just enjoy the deliciousness! We used a frozen pie crust to save even more time. For me, I don’t want to spend a great deal of time or have stress in the morning. So I think making breakfast should be fun and as quick as possible.
Making a quiche always sounds so fancy, and I used to think it was difficult to make. Now, don’t get me wrong, a quiche Loraine is a lot more difficult to make. I won’t make a difficult custard or pie crust before I have my first cup of coffee. I might not even do it before my second cup!! Plus, I don’t think the flavors are that much different.
We’re using 1% milk instead of cream to make this yummy quiche. It’s a healthier choice that’ll help you cut back on calories. But hey, who says you can’t indulge a little? I’m definitely pairing my quiche with some champagne for brunch!!! Another great way to cut a ton of calories is to make this as a crustless sausage quiche. Everything is the same just don’t cook it with a crust.

How to make sausage quiche recipe:
First, remove the crust from the freezer. Let it defrost before cooking if you’re looking to make a delicious sausage quiche. There is no need to pre-cook it; just let it thaw. It takes about 10 minutes for the crust to defrost enough.
NOTE: If you’re in the mood for a delicious crustless sausage quiche, it’s super easy! Just grab a pie pan and give it a quick spray with cooking spray. Then, add all your tasty ingredients right into the dish. Add everything just like you would if you were using a pie crust.
First, cook the sausage until it is fully cooked. Depending on your taste preferences, you can choose between spicy or mild breakfast sausage. I prefer the spicy version, and I also like some crispy bits of sausage in my quiche. Remember to drain the sausage on a couple of paper towels to remove any excess grease. This helps to reduce the calorie count without altering the flavor; in fact, it might even enhance the taste.
Shred the cheese. We use cheddar cheese for this recipe. Sharp cheddar cheese is also an option. It depends on your preference or what you have in your house.
Then, beat the eggs, milk, salt, and pepper together until everything is mixed up and the eggs are smooth.
Now, it’s time to assemble the sausage and cheese quiche! Add the finely chopped onion. We have decided we like to use raw onion. It cooks with the quiche and really adds a nice flavor. But if you prefer, you can cook the onion with the sausage.
Place your cooked sausage and cheese in the pie shell.
Pour the egg and milk mixture slowly over the cheese to allow it to seep through evenly.
Place the sausage quiche in the oven and bake at 375°F for 40 minutes. The quiche is ready when it is firm and does not move in the center.
To determine if the sausage quiche recipe is done, gently move the dish. If the center of the quiche no longer jiggles, it is ready. Another way to check is to use a toothpick and insert it into the center of the sausage and cheese quiche. If the toothpick comes out clean, the quiche is fully cooked. I actually do both methods. Hey, I want my eggs cooked!
