Homemade Ramen Soup

Ok I know it’s still summer and soup is one of those things we usually save for winter even though I love to eat soup year-round.  It’s been in the ’80s and very humid.  So when it rained this weekend and the temperature dropped to 65 we needed soup.  I have seen all these great soup pictures on Instagram so decided we needed to come up with something we haven’t made before.  Our goal is always to cut out the fat.  So we came up with this Low Fat Homemade Ramen Soup Recipe.

Grocery Store Run!

Even though, we had grilled Pork Loin and Chicken Breast in the Fridge from earlier in the week we still needed a few things.   So darn we needed to make a trip to the store.  If you aren’t familiar with us we have 4 BIG Fur Babies.  And 3 of them (Oliver, Roscoe, and Elvis) will not let us out of the door without them.  Frank hates the car and he usually hides in the bathroom or laundry room when we mention the word “GO”.  Yes, in our house you never say anything like “Will you “GO” get me a glass of wine!!  There is major ear movement and titling of heads when that dreaded word is said.

I mean Oliver our big Lab doesn’t move very fast unless he hears “GO” he is at the door waiting.  Sometimes he even barks.  Only One Bark from Oliver is needed.  That Bark ripples through the house. The other two silly boys just run around in circles.  So how can you ever leave that at home!!!

Ramen Soup!

Needless to say, it is a major effort to go to the grocery store.   We lived in Japan for a few years and one of our favorite soups is Ramen Soup.  So we decided we had to have Shiitake Mushrooms, Cilantro, and Spring Onion.  For the soup base, we just picked up some low-sodium Chicken broth.    So it was a quick run in and run out of the store.  Oh wait Ramen Noodles.  Where in the world do they keep Ramen noodles in the store?  After 20 minutes of searching, I decided Udon noodles will work just fine!

Cooking Chicken Breast

If using Raw Chicken Breast. Cut the Chicken breast into bite-size chunks. Place in a saucepan. Sprinkle on a 2 teaspoon Goya Seasoning and add the Chicken Bouillon. Cook over medium heat until chicken is done (takes about 5 to 8 minutes). Don’t worry about the seasoning that sticks to the bottom of the pan. When the broth is poured into the pan all the seasoning will come off and mixes into the broth

Making the Low-Fat Homemade Ramen Soup

Ok, This might be one of the easiest soups ever!!!  What we do:

  1. Slice the Chicken and Pork into strips or bite-size pieces
  2. Chop the green onions
  3. Chop the cilantro
  4. Slice the mushroom
  5. Sauté the mushrooms
  6. Heat the chicken broth.  Mix in some chicken bouillon
  7. Put the Udon noodles in the broth.  Cook for 6 minutes!!!
  8. Pour the udon noodles into serving bowls.
  9. Add the pork or chicken (doesn’t even need to be heated. . .must be cooked!!!)
  10. Place the mushrooms on one side of the bowl
  11. Add the green onions, cilantro, and if you want to spice add some Thai peppers.
  12. Serve and Enjoy!!!

TIPS:

  1.  Add Chicken Bouillon powder to the chicken broth this will enhance the Chicken flavor
  2. Always measure everything
  3. Measure the oil
  4. Chop the veggies and place them in bowls so everyone can build their own soup
