Alfredo zoods, herby noods, and lemon garlic shrimp all bowled up for an easy, breezy (slightly cheesy) supper 👏🏻🥒🍋 🧄🍤.

CREAMY ZUCCHINI ALFREDO (serves 2): 2-3 zucchini, spiralized • 1/2 cup @kitehillfoods plain cream cheese (can sub any plain cream cheese) • 1/4 cup parmesan cheese • 1/2 cup unsweetened almond milk (can sub dairy milk), warmed in the microwave 1 minute • 1/2 teaspoon garlic powder • 1/4 teaspoon white pepper (or regular pepper) • salt and black pepper, to taste 1) bring a large pot of water to a boil; once boiling, blanch zucchini noodles for ~1 minute, or until tender. Remove from water and run under cold water; set aside. 2) In a blender combine all remaining ingredients, except parsley. Blend until smooth. Toss with zucchini noodles and season with fresh cracked pepper.
LEMON GARLIC SHRIMP: heat 1 tablespoon garlic ghee, butter, or olive oil in a large pan over medium high heat for ~1 minute; add 1 lb. shrimp +2 garlic cloves, minced + 3-4 thinly sliced lemon + a dash or salt & pepper; cook 4-5 minutes, or until shrimp is pink. Remove from heat and stir in an additional tablespoon ghee or butter (optional) + 2 tablespoons white wine or water + 2 tablespoons chopped parsley.
HERBY PASTA: toss hot noodles (I used chickpea shells) with olive oil, herbs (I used dried basil + oregano), and parmesan
