When I tell you this recipe is what dreams are made of, I truly mean it. I can always count on everyone being thrilled when I make this delicious chicken sandwich recipe. It is great for serving a crowd!

This dish is so much more than a classic chicken mayo sandwich. It has just the right amount of seasonings, and I love how the soft bread gets a nice crispiness when I toast it on the skillet. The creamy filling with mayo perfectly coats the chicken, ensuring that no part of the sandwich is dry.

This absolute classic version of a chicken mayo sandwich is the best recipe because it is versatile and adaptable! Don’t have whole chicken breast meat? No problem. You can use shredded leftover chicken, like rotisserie chicken.

Or, use up some leftover roast chicken and slice it up! Honestly, roast chicken is one of my favorite ways to make it.

Also, you can use all sorts of different breads. So, don’t feel like you have to go to the store to get special bread. As long as it is sturdy enough to hold the creamy chicken filling, it will get the job done.

Aside from its versatility, I know you’re going to appreciate this recipe for how easy it is. Chicken sandwiches don’t have to be hard to make! So, get ready to be blown away by the recipe’s ease, and of course, by how appetizing and delectable it is.

Here are some notes about the primary ingredients in this recipe:

  • Chicken: Boneless chicken is the foundation of this sandwich! It provides a nice, meaty texture and makes the sandwich so satisfying. I used boneless skinless chicken breast, but you can also use shredded rotisserie chicken.
  • Bread: You’ll need bread for the sandwiches, such as white bread, hoagie rolls, croissants, or other types of buns.
  • Assorted Seasonings: Between seasoning the chicken and the dressing, you’ll need an array of spices, including salt, black pepper, onion powder, garlic powder, and crushed pepper flakes.
  • Fresh Veggies: Diced red onion and celery are mixed into the mayo chicken to provide extra flavour and a nice crunchy texture that offsets the creamy mayo. This recipe also requires fresh lettuce to put on the sandwich when serving!
  • Mayonnaise: This provides a creamy, rich base to coat the chicken pieces with. Use your favorite brand or make some Homemade Mayonnaise.

  • Seasonings: When you cook the chicken, add additional spices, such as ground coriander leaves, cumin, celery seed, or dried herbs.
  • Boiled Eggs: You can hard-boil whole eggs, chop them, and mix them with the other ingredients.
  • Cheese: Feel free to add cheese! You can mix shredded cheese right into the mayonnaise chicken mixture.
  • Use Other Meat: This recipe works just as well with turkey breast meat, whether diced or shredded.
  • Make it Spicy: To make the sandwich spicier, add cayenne powder, chipotle adobo sauce, or jalapenos to the mayo mixture.

  • Mayo: You can substitute a portion of the creamy mayonnaise with Greek yogurt or sour cream. Greek yogurt can also entirely replace the mayo—just keep in mind it will make the sandwich tangier. Another option is to use vegan mayo if you want to use mayo that doesn’t have eggs.

How To Make A Chicken Mayonnaise Sandwich

Step 1: Season and Cook Chicken.

Pat the chicken dry with paper towels, then season the chicken all over. Heat the skillet and cook the chicken on both sides until the internal temperature of the chicken is 165℉.

Let the chicken rest for 5 minutes, then dice it into really small pieces.

Step 3: Make the Chicken Mayonnaise Filling.

Add the mayonnaise, Dijon mustard, lemon juice, diced celery, diced red onion, and a pinch of black pepper to a bowl. Whisk well to combine. Add the chicken and mix until evenly coated with the creamy dressing.

Step 4: Butter and Toast the Bread.

Step 5: Assemble the Chicken Mayonnaise Sandwiches

Place a lettuce leaf on a toasted slice of bread. Spread a quarter of the chicken sandwich filling over, then cover with another bread slice. Cut the sandwich in half using a serrated knife and serve.

    You can also toast the bread in the oven or the air fryer if you wish.

    Tips For Perfect Chicken Mayonnaise Sandwiches

    • If you are someone who just can’t get enough mayo, feel free to put an extra dollop of mayo on the toasted bun before loading it with the lettuce and chicken filling.
    • Keep the bread, lettuce, and chicken mixture separate if you have any leftovers. You’ll want to store the meat in an airtight container with a fitting lid. You can keep the lettuce in a resealable baggy! And the bread can stay at room temperature, lightly wrapped.
    • Don’t assemble the sandwiches until you are actually ready to enjoy them; this way, the bread won’t get super soggy by the time you actually eat it.
