Sweet Potato Samosas
- 4 Sheets of Filo Pastry
- 2 Medium Sweet Potatoes (about 400g) [Peeled, Cubed]
- 1 Small Onion [Peeled, Diced]
- 1 Clove Garlic [Minced]
- 1 tsp Ground Cumin
- 1 tsp Garam Masala
- ½ tsp Turmeric
- ½ tsp Chilli Flakes
- 100g Frozen Peas [Defrosted]
- Low-Calorie Cooking Spray
- Salt and Pepper to taste
- 1 Beaten Egg [For Glazing]
Prepare the Filling:

Boil the sweet potato cubes for 10-12 minutes until soft. Drain and mash.

Meanwhile, in a frying pan, spray low-calorie cooking spray and fry the onion and garlic for 5 minutes until softened.
