This blueberry and vanilla semifreddo dessert is so good you won’t believe it is actually quite healthy.
Making desserts healthily
There are so many dessert recipes that can be made healthily. On the whole, the major issue is cream and sugar so if you find a recipe that avoids those you are on to a winner!
I love quark as an ingredient for desserts as it is a soft cheese but made with skimmed milk so it is low fat.
If you are making a recipe that uses a soft cheese like Philadelphia then swapping to quark usually works well and saves some syns.
Quark tips
In recipes that need quark, there are a few simple things you can do to ensure it tastes good. Quark doesn’t have much flavour so ensure you flavour the dish well.
Quark is available in most large supermarkets now and even stocked in Aldi and Lidl. You can usually find it near soft cheeses in a tub similar to that you would buy cottage cheese in.
Due to the low-fat content of quark, it easily splits if heated too much or has hot water or hot liquid added to it. Be careful and stir in gradually and you should be ok.
Which fruits are best when dieting?
Fruit is great as an addition to a breakfast or dessert. Most fruits are pretty low in calories and good for you. Avocado has high fats so is one to have in moderation. Other fruits such as bananas are more filling and are more calorie-dense so it is usually better to choose melon or an apple over bananas or avocados.
If you follow a specific diet or weight loss plan then they are likely to have specific requirements which usually align with this.
If you cook, puree or blend fruit it is less filling and can be higher in calories due to the way the fruit sugars break down. Also, they are much easier to overconsume.
It would be so easy to drink a smoothie with a couple of bananas, a mango and an apple in a big glass and still not feel full yet most people would not sit and eat all that fruit in one go whole.

If like me you have quite a sweet tooth then don’t panic, there are lots of buys to help you to stay on plan.
Consider ensuring that sweet tooth buys are part of your meal plan and incorporated into your routine. If you don’t you are more likely to slip off-plan and eat a family size bar of chocolate!

If you fancy a different flavour semifreddo it is really easy to swap the ingredients a little to make them whatever you fancy.

This Blueberry and Vanilla Semifreddo is a delicious dessert for all the family. Without using any gelatine this is a vegetarian recipe too!
Beat egg whites well and then stir in custard, fromage frais, quark, sweetener and vanilla extract.
Using a fork crush 100g of the blueberries in a bowl and mix into the custard mix.
Fold in the remainder of the blueberries
Line a loaf tin with cling film and then pour in the semifreddo mixture.
Fold the remaining cling film loosely over the top of the mixture and place into a freezer for 2-3 hours.
Remove from the freezer 30 minutes before serving.
