Healthy Cowboy Potato Bake For All The Family

I wanted to make Stuart something a little different the other day and came up with this cowboy cheesy potato bake. He loves the Cowboy pie I make so I wanted to alter that a little for him.

Well, this Cowboy Cheesy Potato Bake was a big hit and I am pretty sure he will be asking for it again. I shared the picture on my Instagram and was asked a few times for the recipe so here it is!

Making a meal vegetarian easily

An easy way to make a meal vegetarian is to swap the meat for a vegetarian alternative such as Quorn. Other possible swaps are jackfruit, lentils, chickpeas, mixed beans or just extra vegetables.

I have been a vegetarian since I was 10 years old and enjoy a huge variety of food so whatever you do, don’t let being vegetarian mean you need to eat a boring diet.

Making this recipe with Quorn mince

It is really easy to adapt this recipe to use Quorn, as a vegetarian myself I do it often. It is always worth remembering that Quorn takes less time to cook when substituting it for mince.

The importance of adding vegetables to your meals

Vegetables are low in calories compared to their density. This essentially means that they fill you up with very few calories.

The more vegetables you have in a meal either as a side dish or mixed in with the meal itself the lower-calorie the meal tends to be. A filling but low-calorie meal is perfect for weight loss.

All my recipes include vegetables where possible but do feel free to add more as an accompaniment when you can. Always choose vegetables that you enjoy because otherwise you will begrudge eating them and are more likely to stop cooking them at all before long.

Trying vegetables cooked differently or adding more herbs and spices can make them a little more exciting too.

Healthy Lunches

If you are eating healthily then you may have difficulty in finding lunches for work. This is just one of many amazing lunch ideas I have found so do check out my other recipes for more ideas.

If you take lunch to work with you then you are so much less likely to buy food that will inevitably be less healthy. Taking a variety of food throughout the week to work keeps your lunchtimes interesting and stops you from getting bored.

Even if, like me, you work alone at home it can make such a difference having your food already prepared for you. Why not give it a go and make sure you build a variety of lunches into your weekly meal plan.

Comfort eating

It is easy when you are trying to lose weight to fall into the trap of comfort eating when you are feeling down. Finding low syn or syn free snack alternatives can help you avoid weight gain. You do not need to just snack on fruit and vegetables to be healthy – there are so many other alternatives.

If you find that you are regularly feeling down and snacking then maybe you need to address this as possible depression and consider seeing your GP. We all have struggled every now and then so it really isn’t something to be ashamed of.

Another option could be to find something else to do instead of eating when you are feeling down. Give it some thought and see if you can come up with any strategies to help yourself.

Description

This recipe for cowboy cheesy potato bake is Slimming World friendly, full of yumminess and so easy to make. It feels so naughty but actually isn’t!



Preheat Oven to 200°c/ 400°F/ Gas 6

Spray a large baking tray with low calorie cooking spray and then spread the potato slices on it, layering slightly.

Grind a few twists of black pepper and sea salt over the potato slices then sprinkle with the mixed herbs and spray with more low calorie cooking spray. Place tray in oven for 20 minutes.

Meanwhile spray a large frying pan with low calorie cooking spray and fry the minced beef for 5 minutes or until starting to brown.

Add the garlic, onion and pepper to the frying pan and fry for a further 5 minutes.

Add the chopped tomatoes, baked beans, Worcestershire sauce/Hendersons relish and tomato puree and stir well. Cook for a further 5-10 minutes until everything seems well cooked through. Time taken will depend on the sizes you cut the onions and peppers.

Pour the mince mixture evenly into a large ovenproof dish and set aside.

Remove the potato slices from the oven. They should be easy to pierce with a knife but not completely cooked.

Layer the potato slices on top of the mince mixture, top with grated cheese and return to the oven for a further 20 minutes.

Serve with vegetables or salad.
