Slimming World veggie burgers: Butternut and sweet potato

If you are often looking for recipes for tasty veggie burgers look no further. This one is full of flavour, easy to make and will impress guests. The recipe was adapted slightly from one found in Waitrose and made by Ben and his tutor Jassy. We all enjoyed it for lunch so I know you will too.

Making the Slimming World veggie burgers syn free

This recipe for yummy veggie burgers can be changed around. It can easily made to be lower syn or even syn free.

Firstly by omitting the mayonnaise can save 2 syns per portion.

If you use wholemeal bread rolls, ensure they are weighed and fit within your healthy extra b allowance then you will not need to count the burger bun in your syns.

The rice and grain pack is only 4 syns in total so just 1 syn per person. If you really wanted to make this syn free you could cook some rice and grains yourself and add some Spanish style seasoning. This could take away the syns for the Merchant Gourmet pack. I would personally rather have that extra syn and save the hassle.

The total flour used in the recipe for 4 people is only 1 syn so negligible and I wouldn’t count it anyway.

Why you need vegetables to lose weight

Everyone knows vegetables are good for you, don’t they? They are healthy and filling for very few calories!

The best vegetables are those with low-calorie density. Basically, we are talking about the healthier vegetables – potatoes don’t count but butternut squash is much healthier for example!

This means if you eat 100g of spinach, for example, it is just 23 calories and obviously, 100g of anything would fill you up significantly. On the other hand, 100g of crisps, which would be just as filling, is around 536 calories!

Making them on a budget

The total cost of this veggie burgers recipe is pretty good. There are though a few places money could be saved. Watch out for when the Merchant Gourmet packs are on offer. They have a good expiry so will keep them until you need them.

Buying frozen diced butternut squash and sweet potato saves time and can often work out cheaper too. If you would like to use fresh than check out my butternut squash tips.

A good healthy veggie burger that is perfect for all the family



1. Simmer the squash and sweet potato in salt water for 8- 10 minutes until tender, then drain and mash. Let it cool then, mix with the grains and rice, 2 teaspoons of paprika, chopped parsley, lemon zest and 1 teaspoon of flour. Season well to your tastes. Shape into 4 burgers, dusting your hands with a little flour to help.

2. Heat the frylight in a non-stick griddle pan and cook the burgers over a medium heat for 5 minutes on each side until darkened and golden. Stir the garlic into the mayo (Ben had the idea of putting parsley, I thought he was mad but I was wrong!) and mix well.

3. Put a handful of salad leaves on each bun bottom and sit a burger on top. Add a good dollop of garlic mayo (we put in pepper to taste aswell). Put each on a plate and add the bun top and garnish with the salad and take a bite! Bon appetit!
