Β
7. Spinach and Artichoke Quiche
Nothing says brunch like an excellent quicheβ¦unless youβre vegan. Using blended tofu makes this tortilla-crusted quiche bake up creamy, light, and incredibly flavorful. And artichokes are the perfect spring star ingredient. Plus, a 10-minute prep means you have more time to sip mimosas on the patio which is a win-win in my book.
Β
8. Fluffy Blueberry Pancakes
For all those skeptics out there that think you canβt make fluffy pancakes without eggs, you have to try these blueberry pancakes. The recipe offers gluten-free options and suggestions for add-ins so you can customize the batter to please mom.

9. Chocolate Covered Strawberries
Chocolate-covered strawberries are sweet and special for a Motherβs Day brunch or luncheon. With an Instant Pot hack for tempering the chocolate, these are quick and easy to whip up too. Use your favorite vegan chocolate chips or whip some dipping sauce up using cocoa powder and coconut oil.
Β
10. Croissant Muffins
If you miss those buttery croissants that you might have had prior to opting into a vegan lifestyle, you will definitely want to make these croissant muffins. The trick to a successful pastry here is bakerβs yeast. The pastry is rolled out and filled with raisins for added texture and sweetness.

11. Potato Pancakes

Β
12. Avocado Kale Florentine with Smoked Paprika Hollandaise
Bennies for days! Double up on the hollandaise recipe because you will absolutely want to put it on everything. Itβs tangy and garlicky and so creamy your family wonβt believe itβs vegan. Served up with pecan-crusted avocado, and youβve just dialed up this Benedict to celestial levels of amazingness.

Lunch
Β
13. Creamy Spicy Sun Dried Tomato Pasta
Transforming basic pantry staples into incredible dishes is my favorite thing. This pasta is creamy and fresh with enough kick to make it make your mouth water. Pro tip: reserve the oil from the jarred sun-dried tomatoes for an easy dressing for greens β or drizzle on top of the pasta for a gourmet touch.
Β
14. Mushroom Risotto with Pumpkin (Instant Pot)
Thereβs nothing quite as fancy as a plate of risotto. It takes forever to make to layer the flavor profile and build the creamy mess of carby goodness. I totally wonβt tell anyone you didnβt slave over the stove all morning and instead made this in the Instant Pot. (!) The secret ingredient of pumpkin puree gives this a depth of flavor that makes this a restaurant-quality meal.
Β
15. Broccoli Cheese Soup in Bread
Anything served in a bread bowl is decadent, so what better way to treat Mom than a luscious broccoli soup in a bread bowl? This soup starts out with a vegan cheese sauce recipe you will want to bookmark for later. Itβs that good.
Β

A Salade Nicoise is always elegant and special, but making an arranged platter for Motherβs Day is an incredible way to show Mom you love her. Replete with all the best Spring veggies, this salad is hearty enough to be the star of the show or to pair with another light offering.
Β

Β
18. βCrabβ California Rolls
This vegan-friendly βcrabβ California roll is so flavorful and yummy Iβm fairly certain even my non-vegan friends wonβt be able to get enough. The hearts of palm are tangy and salty and balance the sushi rice and nori so well. I donβt even know what Iβm missing. (Hint: not one thing!)
Β
19. Macaroni Salad
Vegan macaroni salad is about as classic as it gets when it comes to pasta dishes. This recipe is easy, fresh, and can be made well ahead of your holiday meal. It is tangy, sweet, and packed with colorful and crunchy goodies.
Β
20. Minestrone Soup
One of my favorite vegan dishes is minestrone soup. It is a complete meal in a bowl that covers all the food group basics. Β
21. Green Bean Curry
While super easy to prepare, this green bean curry tastes as complex as any good Indian curry dish. Serve it with coconut basmati rice to soak up the rich sauce.
Β
Itβs time to ditch the mayo-based potato salad and elevate this humble side dish. This salad is off the charts with fresh green herbs and nuts transformed into a creamy green goddess pesto dressing. I love that Jess offers a great shortcut by using packaged roasted baby potatoes.
Β
23. Pepperoni Pizza
Sure, you can order a vegan pizza, but why not make one from scratch for Momβs special day? Donβt let the thought of that scare you. This vegan pepperoni pizza recipe walks you through every step of the process. The aroma of fresh pizza baking will fill the house.

Desserts
Β
25. Heart-Shaped Churros in Strawberry Sugar
Iβve never known anyone to turn down a churro. Flaky, doughy, sweet, and crisp, they really are perfect desserts. But this recipe gilds the lily by making them into darling little heart shapes β itβs not as hard as youβd think β and coating them with sparkly pink sanding sugar.
Β
26. Buttercream Cake with Elderflower Syrup
Elderflower liqueur might be my favorite cocktail ingredient. Add that flavor to cake and you have the lightest, most flavorful, effervescently special dessert on the planet. Note that this recipe calls for cream cheese and butter, but you can substitute with your favorite vegan options. The cake itself is made with soy milk.
Β
27. Strawberry Cheesecake Bites
These little cups of love look like a million bucks thanks to the rich strawberry coulis on top. Theyβre bite-sized β although weβre pretty sure you canβt eat just one β but you could also chill the cashew cheesecake in a springform pan and cut and serve at the table for lots of wows.
Β
28. Rhubarb Curd Bars
The rhubarb is kind of misunderstood. I think you should give them a chance this Motherβs Day. This recipe for a rhubarb curd bar is utterly pink perfection on a plate. So feminine and fabulous. Your mother and aunties will love love love them. Your kids will too thanks to the vegan shortbread crust that is golden and flaky.
Β
29. Baked Strawberry Cheesecake
We love a no-bake cheesecake, but thereβs something special about a laborious water bath. With almonds and dates and coconut, this is a sweet treat that will probably be even better the next day. This oil-free recipe is something youβll want to save to your collection.
Β

Β
32. Chocolate Hummus Dip
Hummus is so expensive when you buy it from the deli or store-bought on the shelves. Iβm thinking a dessert board laden with fruit and cookies and salty pretzels will be a beautiful Motherβs Day dessert with this chocolate hummus as the star. Itβll just look like a million bucks.
Β
33. Heart Shaped Chocolate Strawberry Rolls
If you really want to show Mom how much you appreciate her, these cinnamon rolls will do just that. Flaky pastries are shaped into hearts with one half filled with chocolate and the other half with strawberries.
Β

Vegan mango curd is an unexpected but utterly lovely addition to a tender sponge cake.

Just crack the edge of your spoon into the crunchy sugar topping of these elegant Meyer lemon crΓ¨me brΓ»lΓ©es. Beneath that is a tart and sweet vegan custard that rivals any dairy-based cream. This would be the best ending to a classy Momβs Day dinner.
Β

Β
40. Strawberry Moscow Mule
You canβt go anywhere in the spring or summer without the Moscow Mule being on the cocktail list. How about making a strawberry mule to celebrate the flavors of spring? Fizzy ginger beer and vodka are a perfect complement to the juicy berries. Muddle them fresh for best results, but I wonβt tell if you have to use frozen.
Β
41. Mint Julep Punch
Spring is in the air when you see mint juleps being passed around at Kentucky Derby parties. What a nice way to start any holiday off. This punch is a twist on the classic mint and bourbon julep.
