Cajun Dirty Rice
- 200g Basmati Rice [Dry Weight]
- 6 Bacon Medallions [All extra visible fat removed, roughly chopped]
- 1 Red Pepper [Deseeded, diced]
- 1 Onion [Diced]
- 2 Garlic Cloves [Crushed]
- 150g Frozen Peas
- 1 tsp Smoked Paprika
- 1 tsp Cajun Seasoning
- ½ tsp Thyme
- ½ tsp Chilli Powder
- 400ml Chicken Stock
- Salt & Pepper
- Low calorie cooking spray

Wash the rice in cold water (twice) then cook according to packet instructions. Drain and set aside.

Spray a large frying pan with Frylight. Add the diced bacon and cook until lightly browned and starting to crisp.

Stir in the onion, garlic, and red pepper. Cook for 2-3 minutes until softened.

Add the smoked paprika, Cajun seasoning, thyme, and chilli powder. Stir well so everything is coated in the spices.

Add the cooked rice, frozen peas, and chicken stock. Stir well and simmer for 7–10 minutes until everything is hot and the stock has mostly absorbed. Season with salt and pepper.
