Are you like me and find that breakfast can get a bit boring? I go through phases of having the same meal every day for a week or so, and then it becomes monotonous.

Life doesn’t have to be this way. There is such a wide range of amazing breakfast recipes suitable for you whether you have plenty of time or find yourself in a rush on a morning.

How to make a Breakfast Quesadilla on Slimming World

This breakfast quesadilla recipe is perfect when you have a little extra time on a morning or if you have overnight guests.

Many people state that breakfast is the most important meal of the day. Having fasted overnight (unless you’re a midnight fridge picker!), waking up hungry is normal. Eating something like this breakfast quesadilla will ensure that you are satisfied until it’s time for your lunch. If you prefer not to eat quite so early, having this as a brunch option is another good idea.

What is a quesadilla?

A quesadilla is a Mexican dish made from a tortilla (or two!) stuffed with a variety of ingredients which is folded and heated on a griddle or in a skillet pan. Traditionally, a quesadilla is made using a corn tortilla. However, a flour tortilla can be just as tasty.

If you like a wrap then it can make a healthy meal on Slimming World within your syns and in my eyes is a much better use of syns than chocolate as it surely has to be healthier, don’t you think?

Step by Step instructions

First, heat a skillet on medium heat with butter or olive oil. Alternatively, to lower the syn value of this recipe, choose Frylight. Add the onion and peppers until softened. Remove from the pan and set to one side for later.

Add the beaten eggs to the pan and cook through until it creates a thin pancake-style circle. Remove from the pan and place on top of the tortilla along with the onion and peppers. Sprinkle over the cheese, salt, pepper and oregano then fold the tortilla in half.

Brush the top of the tortilla with a little oil or melted butter. A couple of sprays of Frylight would also work. Place in the skillet for a couple of minutes on each side, pressing down with a spatula whilst being careful not to push out the mixture.

Remove from the heat, serve and enjoy!

Instructions

Notes

You can easily swap the veggies in this for other ones or even bacon if you prefer!
