How to make shrimp skewers

  1. Fill a medium saucepan with hot water and then add the jasmine rice to it. Get the saucepan lid and cover it. Let it cook for 20 mins at medium-high heat. This is one of the easiest ways to cook rice with very little fuss.
  2. While the rice is cooking, heat the skillet over high heat and add the butter.
  3. Once your skillet is hot, add the broccoli and green beans and let them cook, stirring occasionally.
  4. Once the broccoli and green beans are cooked, remove the vegetables from the pan and set them aside. Add the tiger prawns and let them cook for about 2 minutes on each side, or until they turn pink. You don’t want to undercook them, so keep an eye on the prawns while they are cooking.
  5. Once the prawns are cooked you can then add back the vegetables, pour the chilli sauce into the skillet, and stir all together to combine the flavours.
  6. Get a plate and add your jasmine rice to it, and then either place the prawns and vegetables all over the top or at the side. You could even sprinkle over a bit of herb garnish if you have some. Enjoy!

Recipe Notes and tips

Like with any recipe, no matter how simple it may appear to be, it is always worth taking note of some of the helpful tips and advice that are on offer. I have a couple of suggestions that will help you when making this recipe.

Prepare all of the ingredients before you start cooking – This gives you the chance to be prepared and add the ingredients quickly. This is a dish that cooks very fast, so you don’t want to be preparing vegetables and run the risk of burning your dish.

Make sure your skillet is hot before you add the vegetables to it.

When it comes to cooking prawns, make sure you ensure that they are cooked through. The tiger prawns will go from a grey and translucent colour to a pink shade. This is how you know they are cooked.

It is tempting to mess with rice, but all you need to do is add the rice to the hot water and place the lid on top. The heat from the stove and the steam that is created because the lid will help the rice to evenly cook.

Enjoying this recipe on a diet

On many diets, the only things you would need to be concerned with counting are the butter and sweet chilli sauce, both of which are minimal and you could easily omit the butter if you prefer.

With the below variations you could easily adapt this recipe to suit you if you are following a low-carb diet or similar.

Variations to try

When it comes to any recipe it is always good to hear of any variations you could make and try. This is by no means an exact recipe, and you can do your own thing when it comes to what you add or how you make it. Here are a couple of recommended variations that you might want to try.

Use another type of seafood

For this dish, the flavours work well with other types of seafood but more specifically salmon. You could cut the salmon into chunks and cook similar to the prawns.

However, it would be advisable to add a little bit of extra cooking time. You could also add fish to the prawns to make it more substantial. Either double up the quantities of the other ingredients or reduce the prams by half and substitute for something else.

How to make this vegan or vegetarian

Tofu takes on these sorts of flavours really well, so you could choose to cook with that instead. Or, if you want to stick with vegetables then add others to it to make up the quantities.

Vegetables like peppers, mushrooms, peas and mange tout all work well with this sort of recipe.

Alternative vegetables

If you need to substitute the broccoli or green beans then any of the above vegetables will work. Equally vegetables like aubergine and courgette take on these sorts of flavours really well.

Alternatives to rice

Instead of rice, this would also work well with noodles or even chips if you wanted to make it even simpler. To avoid carbs completely you could try it with cauliflower rice.

Alternatives to seafood

You could also switch the prawns for something like chicken if you prefer.
